Salsa Corn Cups

Ingredients for 5-6 Servings

    Olive oil
  • 14 oz
    Frozen corn kernels
  • 1
    Red bell pepper, chopped
  • 3/4 cup
    Romano cheese, grated
  • 5
    Green onions, finely sliced
  • 1/2 cup
    Cilantro leaves, chopped
  • 1/2 cup
    Mayonnaise
  • 1/3 cup
    Sour cream or Mexican crema
  • 2
    Garlic cloves, minced
  • 1
    Jalapeno pepper, seeded and minced
  • 2 ts
    Chili powder
  • 1 ts
    Ground cumin
  • 1 ts
    Smoked paprika
  • 1
    Lime, zested and juiced

Method

  1. In a large pan over medium heat, add the olive oil and frozen corn and cooked until browned. Set aside to cool.
  2. Chop the bell pepper, chives, and cilantro leaves, then combine the chopped vegetables and corn in a large bowl.
  3. For the sauce, combine mayonnaise, sour cream, garlic, lime juice, lime zest, jalapeno, chili powder, cumin, and smoked paprika in a bowl. Combine into the corn mixture.
  4. Serve cold, and garnish with cilantro.
